Buttery Soy Sauce Noodles

1 package (1lb) Asian BestⓇ Small Rice Stick Noodles
1 tablespoon preferred vegetable oil
4 eggs
1 tablespoon toasted sesame oil
1 tablespoon butter
3 garlic cloves, minced or pressed
½ cup vegetable broth
3 tablespoons SoykingⓇ Thin Soy Sauce
2 green onions, thinly sliced
MaesriⓇ Fried Shallots, for garnish
Directions:
- Soak noodles in warm water to cover for 5-8 minutes until soft. Drain well.
- In a large nonstick skillet heat oil over medium heat. Crack eggs into skillet and cook to desired degree of doneness. Transfer eggs to a plate and set aside.
- In same skillet heat sesame oil and butter over medium heat. Once butter starts to bubble, add garlic and saute until fragrant, about 1 minute. Add drained noodles, broth, and soy sauce and toss well to coat.
- Divide noodles among 4 bowls and top with eggs, green onion, and fried shallots.
